Chicken Curry Soup
Last night I made an awesome soup that was super low cal/fat and so good! I kinda just threw it together but here is what I used: (this is enough for one person) 1 boneless/skinless cooked chicken breast cut into cubes or shredded 1/2 an onion, chopped 1 stalk of celery, chopped 1 carrot, chopped 1.5 cups of chicken broth 1 tbsp of curry powder 1 tsp of cumin 1 tsp of ginger 1 tsp of coriander 1 tsp of garlic 2 kaffir lime leaves salt and pepper to taste 1/3 cup of unsweetened lite coconut milk 3 leaves of fresh basil 1 tsp lime juice 3 cups of fresh spinach Whew, that sounds like a lot but it's so easy. Sautee the onion, celery, and carrot until tender.
Add chicken, broth, curry, cumin, ginger, coriander, garlic, lime leaves, and salt and pepper.
Let simmer for 5 minutes. In your serving dish place a bed of fresh spinach at the bottom.
You are going to pour the finished soup over the raw leaves so don't worry if it looks like a lot,
they will shrink quickly! (SO GOOD!) After the soup has simmered add in the coconut milk, basil, and lime juice.
Pour all of the soup over the spinach leaves and enjoy!
